Venus/Black rice salad

Black parboiled Venus rice 200 g Apples 150 g Carrots 80 g Peas 100 g Corn 40 g

Cooked shrimps 200 gr

Basil leave


Extra virgin olive oil 35 g ½ lemon juice Salt to taste Black pepper to taste


To prepare the Venus black rice salad, first boil the rice in boiling salted water and cook for the time indicated on the package. Then move on to the preparation of the other ingredients: peel the carrot and grate it with a hole grater; wash dry and cut the apple without peeling it first into slices, and then into small cubes.

Boil the peas for 5 minutes in boiling water. In the meantime, prepare the rice salad dressing: squeeze the juice of half a lemon, pour it into a small bowl, salt and pepper to taste and add the olive oil , stirring quickly with a flat spring whisk or fork. Now drain the peas and pass them under cold water to stop cooking; do the same with Venus black cooked rice. At this point you can assemble all the ingredients: pour the rice into a large bowl and add the grated carrots, cooked shrimps, boiled peas, apple cubes, corn and mix well.

Just before serving, season the rice salad with seasoning, mix and garnish with the basil leave, your Venus black rice salad is ready! Storage:

You can keep the Venus rice salad in the refrigerator, in an airtight container, for a couple of days. Freezing is not recommended.
