Taleggio cream risotto & orange fragrance

300 g of rice

120 g of taleggio

40 g of butter

40 g of grated Parmesan cheese

1 glass of dry white wine

1 orange


Vegetable broth

To prepare the risotto with taleggio cheese and orange fragrance, start by carefully washing the orange, preferably organic, dry it, grate the peel, then squeeze the juice and keep everything aside. In a saucepan, melt the butter and flavor the finely chopped shallots. Add the rice, stir. When it has browned, sprinkle it with the wine and let it evaporate.

Bring the risotto to cooking by pouring vegetable broth at a time. A few minutes before it is ready, sprinkle it with the orange juice, add the grated peel, the diced taleggio cheese, salt, pepper and Parmesan.

Serve the Taleggio risotto and orange scent with some orange zest that you will have kept aside.
