Spaghetti with Walnuts pesto, Greek yogurt and basil

Spaghetti with walnut pesto and Greek yogurt (x 4 people)

400 g Spaghetti

For the walnuts pesto:

125 gr walnuts (weight without shell)

1/2 clove of garlic 🧄

1/2 glass of extra virgin olive oil

Some parsley leaves 🍁

Salt 🧂

The walnuts will be added to:

170 gr Greek yogurt


Boil the pasta into water, peeled the walnuts, if not already peeled. Then out them in the mixer glass (leaving some aside for the decoration of the dishes) together with 1/2 clove of garlic, deprived of the soul, 1/2 glass of extra virgin olive oil, a few parsley leaves and a pinch of salt.

Drain the pasta, put aside some cooking water.

In a bowl out the walnut pesto and the Greek yogurt and mix them together, slowly softening the consistency of the mixture with the pasta cooking water. Then drain the pasta and put it seasoned in the bowl with the mixture thus obtained.

Put the pasta on the plates, decorating with some chopped walnut kernels and a leave of Basil.
