Ingredients for 4 cakes:
Dark chocolate 150 g
Butter 80 g
00 flour 20 g
Bitter cocoa powder 10 g
Medium eggs 2
Icing sugar 90 g
Vanilla bean 1
First cut the chocolate coarsely with a knife, then pour it into a small pot for cooking in a bain marie. When the chocolate has melted also add the butter, stir until it is completely mixed. Once ready, turn off the heat and set aside the pot with the melted chocolate, perhaps placing it on a clean tea towel. Meanwhile in a bowl pour the eggs and the yolk, also add the icing sugar and the seeds of the vanilla bean, if not the vanilla drops.
Work the mixture with the electric whisk until it is light and frothy, at that point pour the melted chocolate inside and continue stirring with the whisk to mix the mixture completely.
At this point add the powders to the egg mixture: sift the flour and the cocoa powder then mix with a spatula to incorporate the ingredients.
The dough is ready, take some 8 cm diameter aluminum molds with a 4 cm high edge, butter the bottom and the edge and then sprinkle with brown sugar (alternatively you can use cocoa powder or sugar to veil). Pour the dough by filling 2/3 the molds for 2/3, then bake the cakes in a preheated static oven at 180 ° for 13-15 minutes. When the cooking is finished, immediately take out your patties.
Turn them upside down on a serving dish while still being hot, being careful not to burn yourself, complete by sprinkling the dark chocolate cake with icing sugar and serve immediately!
We recommend consuming at the moment. You can keep the chocolate cake with raw dark heart in the refrigerator for 1 day covered with plastic wrap or you can freeze it for a long time; frozen is an excellent solution when guests suddenly come to dinner!
Just put them in the oven when frozen: it will take a few more minutes to cook (3-4 more minutes).
