Left over Saffron/Zafferano Rice Croquettes with cheese ❤️

Ingredients :


400 g saffron risotto Parmesan cheese 1 egg 1 yolk Bread crumbs Salt Peper Fry Oil Scamorza cheese or Swiss cheese


Preparation:


To make the rice croquettes with Scamorza or Swiss cheese, take the risotto, we have used the classic saffron risotto.

The leftover risotto was kept in a refrigerator covered with cling film, remove it from the fridge and in the meantime prepare one bowls containing cheese cut into small morsels. Take a handful of rice, about a spoon and work it with your hands to give it the shape of an egg, then press the center to create a groove that will serve for the filling

Fill the croquettes with a few cubes of cheese and then close with more rice so that the filling does not come out, press the croquette well with your hands to compact it and then lay it on a tray covered with parchment paper. Continue in this way until all the ingredients are used up, with the indicated doses you will get about 12 croquette.

Now that the croquettes are ready you can proceed with the breading: in a bowl put the eggs and beat them with a fork, salt and pepper. Then put the breadcrumbs in a baking dish, at this point you can start breading the croquettes by dipping them one by one in egg and then in breadcrumbs. Place the croquettes in breadcrumbs on the tray lined with parchment paper and prepare for frying: heat a pot with plenty of seed oil, the ideal temperature is about 170 ° -180 °, if you do not have a thermometer, dip a pinch of breadcrumbs in the oil and if it sizzles then it is ready for frying.


Dip the croquettes a few at a time so as not to lower the oil temperature too much and cook until golden brown for about a couple of minutes. When cooked, drain the croquettes with a slotted spoon and place them on a tray lined with paper towels to lose excess oil. Alternatively you can cook the croquettes in a static oven preheated to 200 ° for about 10 minutes or until golden brown. Your rice croquettes with cheese are ready to be enjoyed hot!


Storage:

It is advisable to consume hot croquettes immediately to enjoy them at best.

The croquettes can be frozen before or after frying.
