300 g of Rigatoni pasta 200 g of Smoked Salmon 250 ml of Cooking cream 1/2 onion Olive oil 150 gr Bacon Parsley
We boil the water for the Rigatoni. We chop half an onion with the bacon and brown it in a large pan with a drizzle of olive oil.
Then we cut the salmon into small pieces and pour it into a pan. We leave to cook stirring occasionally. To prevent it from drying out too much, pour a ladle of pasta cooking water, then salt to taste.
At this point we combine the cooking cream and mix. Allowing to cook for a few minutes until it reduces a little. As soon as the water boils we cook the Rigatoni. When ready, drain them directly in the pan and mix.
If you wish, you can add and complete with grated cheese and chopped fresh parsley.
