500 g Fresh prawns
q.s. Olive oil
q.s. Fine salt
150 gr Parmesan cheese flakes
Clean the prawns by removing the head, tails, the carapace and the intestine with the help of a toothpick.
Blanch them in a pan with very little water, for a few minutes. They will have rosy results.
Prepare the marinade: in a large bowl, press the lemon juice removing the seeds.
Add enough olive oil, fine salt and pepper.
Emulsify in order to mix the ingredients. If the bowl is large, you can dip the prawns inside.
Mix so as to season them perfectly. Cover with a lid or a sheet of plastic wrap and keep in the fridge for 2 hours (thanks to the initial cooking) until the whole night.
When you want to serve them, the advice is to keep them at room temperature for 15-20 minutes in order to dilute them.
Add the Parmesan cheese flakes and the plate is ready to be served!
