Lobster 2 kg
Tomatoes 400 g
Red onions 1
Parsley 30 gr
Green Peas 150 g
Extra virgin olive oil 6 tbsp
Cook the lobster by immersing it still alive for about ten minutes in a large pot with boiling water.
Once cooked, let it cool then cut the pulp by cutting the shell and claws with the help of sturdy kitchen scissors. Keep the head for the plate presentation.
Reduce the pulp obtained into small pieces and transfer it to a serving dish.
Boil the green peas and, cubes of potatoes for the necessary time.
Once cooked keep on the side.
Onions, tomatoes cut into small pieces and season with salt.
Prepare the dressing by emulsifying the oil, and lemon juice together.
Also add the finely chopped parsley and pour the emulsion over the lobster.
Mix all the ingredients together and place it in bowl or pan.
Add olive oil and salt as you desire.
