Fish Fry (Frittura di pesce)

Ingredients:


Calamari (Preferably Fresh) Shrimps (Preferably Fresh) Zucchine

Semolina wheat flour

Lemon Salt and pepper



Preparation:


Clean the Shrimps, and cut the squid into rings, wash them and put them to drain in a colander for a few minutes. Dry all of them well a few at a time with paper towels.


Wash and dry the zucchine and then cut it into thin slides 5 cm x 1 cm.

Put the oil to heat on the fire in a slightly deep pan, as soon as it reaches 170 ° the oil is ready (if you don't have a kitchen thermometer, you can use the grandmother's method by putting a little breadcrumbs in the hot oil, just makes many bubbles the oil is ready). Put the semolina in a tray and flour the fish ans zucchine well a few at a time (those that will go in the pot that you put on the fire). Fry the zucchine first and then the fish a little at a time, putting it in the oil one by one and as soon as one side is golden brown, turn it over. Leave to dry on kitchen paper towels. Season with salt and pepper and serve immediately hot with lemon slices.
