Cheese flan with caramelized onions

2 red onions

1 tablespoon of brown sugar

1 egg

120 g of cottage cheese

150 g of fresh goat cheese

1 knob of butter



Balsamic vinegar


Finely cut 2 red onions and stew them in a pan with 1 knob of butter.

Season with salt, pepper, once cooked, add 1 tablespoon of brown sugar and let simmer on low heat with the lid.

Check the onions from time to time and if necessary add a little water if they dry too much. Towards the end of cooking add a drop of balsamic vinegar.

The onions will be ready when they have taken on the appearance of a jam.

In a bowl mix 120 g of ricotta and 150 g of fresh goat cheese with 1 egg.

And adjust with salt and pepper.

Fill a cups with the mixture up to ¾ .

Bake in the preheated oven at 180 ° C for about 20-25 minutes.

To compose the dish: turn the pies upside down and complete with a caramelized onions and a cheese crusty chip.
