Breaded and fried eggs with asparagus

Ingredients:


5 medium eggs

500 gr of asparagus

00 flour to taste

Breadcrumbs to taste

Salt to taste

Extra virgin olive oil to taste

Peanut oil for frying to taste

Grated Parmesan cheese to taste




Preparation:


Remove the hard, woody part from the asparagus, cook them for about 15 minutes.

In a saucepan, bring plenty of water to the boil, and cook 4 medium eggs for 5 minutes.


Drain them and pass them immediately under a jet of cold water.

Take a plate and beat the remaining egg


Add a pinch of salt, when the eggs have cooled, shell them pass them in the flour then in the beaten egg and finally in the breadcrumbs.


Take a pan and heat plenty of oil and when it is hot fry the eggs until the breading is crisp and has reached a beautiful color.


Put the asparagus on a plate, add Parmesan cheese and complete with the fried egg cut in half.
