Pork ribs 1 kg Potatoes 1 kg Rosemary 1 sprig 2 cloves garlic Salt to taste Black pepper to taste Extra virgin olive oil 20 g
To prepare the ribs in the oven started with potatoes: wash them well.
Cut them into wedges, peel the garlic leaving the whole wedges and cut them into parts (if you prefer you can deprive them of their soul).
In a large bowl pour the potatoes, spare ribs, garlic, rosemary.
Season also with salt and pepper and oil. Mix well with your hands.
Transfer everything to a large pan, cover with aluminum foil and bake in a preheated static oven for about 3 hours at 160 °.
After 3 hours, remove the aluminum foil and raise the oven temperature to 220 °.
Let them cook again for 45 minutes. Serve the ribs in the oven hot! Storage: The spare ribs can be kept in the fridge for 1-2 days. Freezing is not recommended.
