Green Peas 1 kg
White onions 100 g
Fresh liquid cream 20 g
DOP Grana Padano 50 g
Extra virgin olive oil 30 g
Fine salt to taste
Black pepper to taste
To prepare the creamy green peas start to prepare the vegetable broth, when it is ready, clean the onion, then slice it; in a saucepan, heat the oil lightly over low heat and dip the onion.
Let the onion lightly dry on low heat, stirring frequently to avoid burning.
Then add the peas (whether you use fresh or frozen peas the procedure will be the same)
salt, pepper and mix everything. Leave to cook for about 5 minutes, then cover with 350 g of vegetable broth (keep 50 g aside).
Continue cooking for another 15-20 minutes, then turn off the heat and using an immersion mixer. Blend everything by gradually adding the vegetable broth kept aside until reaching a smooth consistency and the desired density.
Add the fresh cream turn the heat back on and continue cooking for another 5 minutes, stirring frequently. Transfer your pea cream into a colander and sift it with the help of a spatula to make it even creamier.
Serve your pea cream and garnish with flakes of Grana Padano to taste before serving it hot or warm as you prefer!
