Start by taking the seeds from the vanilla bean: cut it lengthwise and scrape the flesh with the blade of a knife. Keep aside, meanwhile pour the cold eggs in a mixer, 3 pieces of cold butter, add the sugar and the seeds of the vanilla pod 4, lastly add a pinch of salt 5. Close the mixer with the special lid and blend everything at medium speed 6 to obtain a homogeneous mixture. Sift the flour and baking powder into a bowl, then gradually pour the powders into the mixer in operation, alternating them with the milk. Continue to blend everything until you get a homogeneous and fluid dough. Then take care of the apples: wash and dry them, then divide them in half then into 4 wedges; proceed to remove the core but do not peel them. With a mandolin, cut thin slices from each quarter of apple. If you do not have the mandolin, you can use a knife with a very sharp blade to obtain very thin slices. Grease and flour a 24 cm diameter pan. Then pour the dough into the cake and level the surface with a spatula or by swirling the pan on the workbench, without whipping it to avoid losing air to the mixture, thus compromising the leavening and cooking. Arrange the slices of apple at your wish, press lightly to make the apple slices sink slightly. Sprinkle the surface of the apple pie with brown sugar; once ready, bake in a preheated static oven at 180 ° for 50 minutes, cooking on the lowest shelf.
Once cooked, take it out of the oven, wait for it to cool, then turn it out and serve your apple pie with rays if you prefer with a scoop of cream ice cream! Storage:
You can store the apple pie in rays under a glass bell for 2-3 days.
You can freeze it once it has cooled completely, even in slices if you prefer.
